Can anyone identify this beautiful grain?
Believe it or not this gorgeous cold salad was on the salad bar at work. Kudos to Lakeland Regional Medical Center for having more healthy and interesting choices! Maybe one day they’ll even get around to labeling things! One step at a time…

It looks like couscous.
It looks like pearl couscous…possibly a barley pearl couscous. It is used in salads a lot. Go with that

that is definitely red quinoa – it’s really good and nutty, plus it packs a good protien punch
That’s what I thought. Huge fan of quinoa, but have never had the red. Yum.
